Ingredients

Units Scale

Meatballs

  • 1 lb vegan ground beef
  • 2 cloves garlic, minced
  • 1/4 cup panko breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 Tbs fresh parsley, minced
  • 1/2 cup onion, finely minced
  • 1/8 tsp ground nutmeg
  • 1/8 tsp white pepper
  • 1 Tbs olive oil, for cooking

Sauce

  • 1/2 cup vegan butter
  • 1/2 cup flour
  • 4 cups vegan beef broth (or veggie)
  • 1 1/2 tsp Dijon mustard
  • 3 Tbs Worcestershire sauce
  • 1/8 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Mix Meatballs:  Add all the meatball ingredients except the olive oil to a large bowl and mix well.  I find it's best to get in there with my hand to ensure that everything is well mixed.  Then form them into small balls using a cookie scoop or a spoon.  You want them to be uniform in size so they cook well and should get about 20 meatballs.
  2. Cook Meatballs:  Heat the olive oil in a pan over medium heat.  Then add the meatballs to the pan and cook for 8-10 minutes turning to cook on all sides.  Remove from the pan and set aside.
  3. Sauce:  In the same pan, melt the vegan butter and then sprinkle the flour over the butter.  Whisk this butter flour mixture as it cooks for 3-4 minutes.  It should start to lightly brown and smell nutty.  This step helps to get rid of that raw flour taste.  Then slowly stream in the broth whisking constantly to ensure a smooth sauce.  Stir in the mustard, Worcestershire sauce, pepper, garlic powder, and onion powder until well incorporated.  Bring to a low simmer and cook for 5-7 minutes to thicken.
  4. Finish:  When your sauce has achieved the desired consistency, add the meatballs back into the pan and cook in the sauce for 5 minutes until they're warmed through.
  5. Serve: over mashed potatoes or noodles and garnish with parsley.
