    These vegan stuffed dates are the perfect bite. Sweet dates filled with tangy vegan goat cheese and topped with a smoky pecan and a drizzle of balsamic.

    These little gems can be put together in just a few minutes and are great for parties or a late night snack.

    Ingredient Notes

    • pitted dried dates
    • soft cheese - I like to use my epic vegan goat cheese for these, but if any spreadable cheese will work. Cream cheese would also be a great option.
    • pecans - these smoky toasted pecans provide great flavor and can be whipped up about 5 minutes, but regular pecans will work too.
    • balsamic - use either a good balsamic vinegar or a balsamic glaze

    Instructions

    These couldn't be easier to put together!

    Preheat your oven to 400 degrees.

    Slice open one side of the dates and fill with a spoon of the softened cheese.

    Top with a pecan and place on a baking pan.

    Bake for 10 minutes. This warms them up and helps to soften the dates.

    Remove from the oven and transfer to a plate. Then drizzle with just a touch of balsamic.

    That's it. Now pop one in your mouth!

    Storage

    These vegan stuffed dates are best served fresh, but will keep in the fridge for a few days in an air tight container and can be reheated in the microwave or oven.

    Description

    Ingredients

    Scale
    • 12 dried pitted dates
    • 5-8 oz vegan goat cheese or cream cheese
    • 12 smoky toasted pecans or regular pecans
    • balsamic vinegar or glaze

    Instructions

    1. Preheat: Oven to 400 degrees.
    2. Prepare:  Use a knife to make a cut along one side of the dates and split them open.
    3. Assemble:  Fill with a spoonful of the softened cheese.  Then top each one with a pecan and place on a baking sheet.
    4. Bake:   for 10 minutes and then remove from oven and transfer to a plate.
    5. Drizzle:   Spoon over a touch of balsamic over each date.
