- pitted dried dates
- soft cheese - I like to use my epic vegan goat cheese for these, but if any spreadable cheese will work. Cream cheese would also be a great option.
- pecans - these smoky toasted pecans provide great flavor and can be whipped up about 5 minutes, but regular pecans will work too.
- balsamic - use either a good balsamic vinegar or a balsamic glaze
Instructions
These couldn't be easier to put together!
Preheat your oven to 400 degrees.
Slice open one side of the dates and fill with a spoon of the softened cheese.
Top with a pecan and place on a baking pan.
Bake for 10 minutes. This warms them up and helps to soften the dates.
Remove from the oven and transfer to a plate. Then drizzle with just a touch of balsamic.
That's it. Now pop one in your mouth!
Storage
These vegan stuffed dates are best served fresh, but will keep in the fridge for a few days in an air tight container and can be reheated in the microwave or oven.
