Vegan Strawberry Crostini

Description

These vegan strawberry crostini topped with juicy strawberries, fresh basil and a drizzle of balsamic vinegar are a perfect summer appetizer. The tangy, creamy goat cheese pairs well with the sweet strawberries and bright flavor of the basil.


Ingredients

  • 1 baguette
  • 2 Tbs olive oil
  • 12-14 strawberries
  • 4-5 oz spreadable vegan cheese (like this vegan goat cheese or vegan cream cheese), at room temperature
  • 4-5 basil leaves, finely cut
  • balsamic vinegar or glaze

Instructions

  1. Preheat:   Oven to 350 degrees.
  2. Bread:  Slice the baguette on the diagonal into ½" thick pieces.  Brush the bread slices with olive oil and place on a baking sheet.  Bake at 350 degrees for 7-8 minutes until they start to get toasted.
  3. Toppings:  Wash and cut the strawberries into thin slices.  Prepare the basil by rolling the leaves and slicing into thin ribbons.  
  4. Assemble:  When ready to assemble - spread each crostini with cheese, then top with several slices of strawberry.  Sprinkle with basil and drizzle the top with balsamic.  Serve at room temperature.

Notes

  • This recipe works best when everything is at room temperature when assembling and serving.
  • The bread can be toasted earlier in the day and assembled just prior to serving.
