Vegan Candied Pecans

Description

These are the best vegan candied pecans and are so quick and easy to make right on the stovetop. Sweet with just a hint of heat, they're perfect for snacking and just the thing to jazz up a boring salad.


Ingredients

  • 1 cup raw pecan halves
  • 2 Tbs vegan butter
  • 1/4 cup brown sugar
  • 3 tsp maple syrup
  • 1/4 tsp cayenne pepper - or more if you prefer things spicy
  • pinch of salt

Instructions

  1. Toast:  Start by toasting the pecans in a dry non-stick or cast iron pan set over medium-high heat for 4 minutes stirring often to avoid burning.  They will start to smell toasty and fragrant and slightly darken in color when they're ready. Then transfer the toasted nuts to a bowl and set aside.
  2. Cook:   Add the vegan butter to the pan and once it's melted stir in the brown sugar and maple syrup.  Continue to stir until the sugar is dissolved and then mix in the salt and cayenne pepper until combined.  Throw the pecans back into the pan and stir them around until nicely coated.
  3. Cool:  Spoon the pecans onto a piece of parchment paper and allow to sit at room temperature for 15 minutes or until cooled.  Then break apart if necessary and enjoy!

Notes

  • Be careful not to burn the nuts during the toasting step.  There's a fine line between beautifully toasted and burnt and it can happen quickly so keep an eye on them.
