Description
This arugula salad with apples is easy to throw together and tastes amazing! Peppery arugula topped with tart apple slices, sweet and spicy pecans, and creamy goat cheese are drizzled with a lemon mustard vinaigrette.
Ingredients

For the dressing
- 3 Tbs lemon juice
- 6 Tbs olive oil
- 2 tsp agave
- 1 tsp dijon mustard
- 1 Tbs shallot, minced
- salt and pepper to taste
For the salad
- 5 oz arugula
- 1 apple, thinly sliced
- 1/3 cup toasted pecans - we like to use these candied pecans
- 1/2 cup goat cheese, crumbled - we used my homemade vegan goat cheese
Instructions
- Dressing: Add all the dressing ingredients to a small jar and shake until thoroughly combined. Set aside.
- Assemble: Lightly toss all the salad ingredients together in a large bowl or for a more impressive presentation layer the ingredients on a serving platter starting with a bed of arugula.
- Drizzle: Just before serving drizzle on a few spoons of the dressing and enjoy!
Notes
- Store any leftover dressing in an airtight container in the fridge for up to a week.
